🥔 Potatoes & Green Beans
A comforting, flavorful side dish made with tender potatoes and seasoned green beans. It’s simple, hearty, and perfect alongside roasted chicken, grilled meat, or as a satisfying meal on its own.
📝 Ingredients
- 1½ lbs (680 g) baby potatoes, halved
- 1 lb (450 g) fresh green beans, trimmed and cut into pieces
- 1 small onion, diced
- 3 cloves garlic, minced
- 3 tbsp olive oil or butter
- 1½ cups chicken or vegetable broth
- 1 tsp salt, or to taste
- ½ tsp black pepper
- 1 tsp paprika
- ½ tsp dried thyme
- ½ tsp dried parsley
- ½ tsp onion powder
- ½ tsp garlic powder
- 1 tbsp Worcestershire sauce (optional)
- 3–4 slices cooked bacon, crumbled (optional)
👩🍳 Instructions
- Prepare the vegetables:
Wash the potatoes well and cut them into halves or bite-sized pieces. Trim the green beans and cut them into smaller pieces. - Sauté the aromatics:
Heat the olive oil or butter in a large pot or Dutch oven over medium heat. Add the diced onion and cook for 3–4 minutes until softened. Add the minced garlic and cook for another 30 seconds. - Add the potatoes:
Add the potatoes and stir well so they become coated with the seasoned oil. Sprinkle in the salt, black pepper, paprika, thyme, parsley, onion powder, and garlic powder. - Add the green beans and broth:
Add the green beans, then pour in the broth. If using Worcestershire sauce, add it now. Stir everything together. - Simmer:
Bring the mixture to a gentle boil, then reduce the heat to low. Cover and simmer for 25–35 minutes, stirring occasionally, until the potatoes are fork-tender and the green beans are cooked through. - Finish the dish:
Taste and adjust the seasoning. If using bacon, stir the crumbled cooked bacon in during the final 5 minutes. - Serve:
Serve hot with a little of the flavorful cooking broth spooned over the potatoes and green beans.
🍽️ Serving Tip
For extra flavor, finish with a small pat of butter and a sprinkle of fresh parsley just before serving. This dish pairs especially well with roasted chicken, beef, pork-free sausage, or grilled fish.
